dulce de leche whole grain oatmeal raisin cookies

In light of recent really good food I've been eating (thank you Sarah, Rosa, Mariah, Josefina, Debbie, Joanna, Naomi) I felt inspired to do something a little unique. So this morning I made some dulce de leche whole grain oatmeal raisin cookies. That's a mouthful, haha, get it...a mouthful? Right. So the recipe:

1 cup brown sugar
3/4 cup butter
1 egg
1 cup milk
1/3 cup dulce de leche
1 3/4 cup whole wheat flour
2 teaspoons baking powder
3 teaspoons cinnamon

1 teaspoon ground nutmeg
2 cups oats (instant or regular)

1 cup raisins

1 teaspoon vanilla extract


1. Cream together butter & brown sugar. Add egg and vanilla.

2. In a small saucepan over low heat, add milk and dulce de leche together, and stir, to help dissolve dulce de leche. Not much time is needed.

Add in mixture from step #1 to dulce de leche/milk mixture. Stir well.
4. In a separate bowl, sift in flower, add baking powder, cinnamon, oats, and nutmeg. Stir and blend ingredients well. Add in raisins.
5. Pour liquid mixture from step #3 into dry mixture. Stir well.
6. Use a non-stick pan or lightly butter a cookie tray & use a tablespoon to drop cookie mixture onto pan, leaving 3/2 inches in between each cookie. (that's my math humor - 3/2)
7. Bake in oven set to 350 F for 8-9 minutes or until edges are light golden brown.
